Meet our helpful and knowledgeable staff:
 

Marlon Aranha, our General Manager, will attend to every detail during your visit. Marlon joins The National Hotel after selling his restaurant in a Washington DC suburb, and previously managed the top and most prestigious Indian restaurant, Taj Palace, in Montclair, NJ for fifteen years. You are sure to notice his experience, keen eye for detail and management skills. Marlon has years of experience supervising restaurant and bar staff, developing menus, creating staff training manuals and hiring experienced chefs and kitchen staff.

Our talented kitchen staff is led by Pete D'Costa, who proudly leads our highly motivated culinary experts. Pete's passion for guiding his staff while allowing them to be creative and develop seasonal menus that source the freshest ingredients from the area, allows him to bring to fruition our plan to support local and sustainable farmers. His Portuguese and Indian background inspire the direction he gives and he fuses that with his love of Spanish ingredients and traditional dishes, leveraging our combined ethnic make-up. Every dish is approached with a flair for interspersing authentic international spices into the dishes, ultimately creating a juxtaposition of flavors that stretch the diners’ palate for a unique and savory experience.
